7 seasonal recipes that are perfect for spring

Seasonal cooking will always be in style. We’re celebrating spring’s harvest with Abigail Donnelly’s light, bright and breezy veg dishes. They’re perfect for light meals or as sides for dinner. All you have to do is add your favourite protein on the side!

1. Tabbouleh-style sorghum

If you're a fan of tabbouleh salads, you'll enjoy this one. Rather than using bulgur wheat, Abigail used Woolies’ red sorghum for the salad. She likes to use sorghum instead of the usual barley or couscous in salads as she finds its chewy texture very satisfying. The tabbouleh is substantial enough to serve on its own, but also works well with braaied steak or lightly smoked snoek.

2. Broccoli-and-sugar snap salad

Fresh light and full of flavour, this salad is as delicious as it looks. There’s so much flavour in the chilli-mint verde – it’s the perfect complement to Woolworths’ barbeque chicken kebabs.

3. Braaied brinjals

Cooking brinjals on the fire until soft is one of Abi's favourite way to prepare them. They're really easy to make, and the fun is in the toppings. In this recipe, the brinjals are topped with yoghurt, crispy onion sprinkle, herbs and a home-made taramasalata. Serve the smoky brinjals with braaied lamb chops, flatbread and a large Greek salad.

4. Tomato-and-butter bean salad

Beans may form the bulk of this salad, but the dressing is the star. Made with ClemenGold juice, olive oil, garlic and Dijon mustard, it's bursting with flavour and can also be used for other salads. It can be kept in the fridge in a sealed jar for a week. If you opt to use it for this hearty salad, Abi recommends serving it with peri-peri chicken wings.

5. Crustless asparagus tart

This is such an easy weekday dinner. Abi recommends making double the quantity as it’s the perfect lunchbox filler – it even works well stuffed into a bread roll as a substantial filling. Fry up some pork bangers to serve on the side.

6. Baby marrows with curried coconut sauce

This is an easy recipe to make in advance and serve at room temperature. It's also versatile enough for you to add your favourite greens, from fine beans to sugar snaps. Serve with grilled fish or seared, peeled prawns tossed in curry paste. You could swap the baby marrow for chargrilled purple sprouting Tenderstem broccoli.

7. Tuna aioli salad

For this take on a tuna salad, Abi blends the tuna into a creamy dressing. The result is a creamy aioli that makes a can of tuna go far. The dressing goes well with any combo of raw vegetables and is delicious served with garlic bread and grilled chicken.
