Ingredients
Method- 4 plums
- 400 g frozen summer berries, thawed
- 440 g caster sugar
- 1 vanilla pod, split
- Stone fruit, sliced, for serving
- 2 litres lemonade or soda water
- 10 g fresh mint
Method
Ingredients1. Place the plums and berries into a saucepan with 1⁄2 cup water, bring to a simmer, then add the sugar and vanilla seeds. Stir until the sugar has dissolved, then simmer for 5–10 minutes, or until syrupy and reduced.
2. Remove from the heat and strain into a bowl. Allow to cool, then pour into a sterilised bottle.
3. When ready to serve, slice the stone fruit and place into a pitcher. Fill with crushed ice, lemonade, mint and 1–2 T of the cordial.
