If you’ve never encountered these grape-sized gems, kiwiberries are a delicious twist on the classic kiwi. With smooth, edible skin and a sweet-tart flavour, they’re perfect for whipping up this refreshing, 4-ingredient sorbet. Just add caster sugar, water, and a dash of lemon juice, and you’ve got a cool treat to enjoy all summer long.

- 112 g Woolworths caster sugar
- ½ cup water
- 500 g Woolworths kiwiberries
- 1 Woolworths seedless LemonGold®, juiced

1. Heat the sugar and water in a saucepan over medium heat, stirring until the sugar dissolves. Set aside to cool.
2. Blend the kiwiberries with lemon juice and cooled sugar syrup until smooth.
3. Churn in an ice-cream machine according to the manufacturer’s instructions. If you do not have an ice-cream machine, freeze for 30–45 minutes, then use a fork to stir and break up any ice crystals. Repeat every 30 minutes for about 3–4 hours, or until the sorbet is smooth and scoopable.
4. Transfer to a container and freeze for at least 2 hours before serving.
Cook’s tip: For a creamier texture, beat an egg white until frothy and stir into the mixture before churning. This adds lightness and a smoother mouthfeel.
