30 minutes“This sheet pasta is simple and wholesome, with the most delicious quick-cooked tomato sauce that tastes like it’s been bubbling away for hours. It’s a good dish for the kids; it has those clean, familiar flavours that they love. And if you’ve been wondering how to use up those spare lasagne sheets in your pantry, this is your chance!” – Khanya Mzongwana
Ingredients
Method
- 12 dried lasagne sheets
- 4 T extra virgin olive oil, plus extra for serving
- 100 g butter
- 1 large onion, roughly chopped
- 4 large tomatoes, roughly chopped
- 1 T sugar
- sea salt and freshly ground black pepper, to taste
- 100 g green olives
Method
Ingredients
1. Bring a large saucepan of water to the boil and cook the lasagne sheets in batches, stirring often to prevent them from sticking to each other. Place the cooked sheets on a plate drizzled with olive oil.
2. Heat the butter in a pan and add the onion. Cook gently over a medium heat until the onion has softened, about 5 minutes. Stir in the tomatoes, then simmer for 10 minutes, stirring often. Add the sugar and seasoning and stir again. Add a little water to loosen if necessary.
3. Toss the lasagne sheets in the bhisto and add the olives. Drizzle with olive oil and serve warm.
