Ingredients

Method
  • 12 dried lasagne sheets
  • 4 T extra virgin olive oil, plus extra for serving
  • 100 g butter
  • 1 large onion, roughly chopped
  • 4 large tomatoes, roughly chopped
  • 1 T sugar
  • sea salt and freshly ground black pepper, to taste
  • 100 g green olives

1. Bring a large saucepan of water to the boil and cook the lasagne sheets in batches, stirring often to prevent them from sticking to each other. Place the cooked sheets on a plate drizzled with olive oil.

2. Heat the butter in a pan and add the onion. Cook gently over a medium heat until the onion has softened, about 5 minutes. Stir in the tomatoes, then simmer for 10 minutes, stirring often. Add the sugar and seasoning and stir again. Add a little water to loosen if necessary.

3. Toss the lasagne sheets in the bhisto and add the olives. Drizzle with olive oil and serve warm.
