20 minutes Looking for a great way to use up those carrots lurking at the back of your fridge as well as any other veggies lying around? This carrot muffin recipe is the answer! Made with Woolies’ savoury muffin mix, it’s also easy to throw together for a quick breakfast or on-the-go snack.

- 420 g Woolworths savoury muffin mix
- 2 large carrots, peeled and grated
- 100 g baby marrow, grated
- 50 g Parmesan, grated

1. Preheat the oven to 180°C and line a muffin pan with wrappers. Prepare the muffin mixture according to package instructions, then add the grated carrot, baby marrow and cheese.
2. Mix to combine, then spoon into the muffin wrappers and bake for 15 minutes, or until cooked through.
