Tracy’s potato kugel

50 - 60 minutesA kugel is basically a pudding (or if you live in Johannesburg, a Jewish woman who spends a lot of time and effort and money on looking good!) The potato kugel is a traditional Jewish dish and can be made gluten free by substituting flour with potato flour.

- 6 medium potatoes peeled
- 1/2 onion
- 125 g flour
- 2 t baking powder
- 4 T schmaltz
- 2 free-range eggs
- 4 T syrup
- ½ t ground white pepper
- 1 t pink salt
Method
Ingredients
1. Preheat the oven to 200°C. Grate the potatoes and onion on the thick side of the grater, or use the grating attachment on a food processor.
2. Add all the other ingredients and mix thoroughly.
3. Bake in a large, greased ovenproof dish until golden brown. Start checking after 45 minutes, can bake up to 60 minutes.
