Tracy’s potato kugel

A kugel is basically a pudding (or if you live in Johannesburg, a Jewish woman who spends a lot of time and effort and money on looking good!) The potato kugel is a traditional Jewish dish and can be made gluten free by substituting flour with potato flour.

  • 6 medium potatoes peeled
  • 1/2 onion
  • 125 g flour
  • 2 t baking powder
  • 4 T schmaltz
  • 2 free-range eggs
  • 4 T syrup
  • ½ t ground white pepper
  • 1 t pink salt

Method

Ingredients

1. Preheat the oven to 200°C. Grate the potatoes and onion on the thick side of the grater, or use the grating attachment on a food processor.

2. Add all the other ingredients and mix thoroughly.

3. Bake in a large, greased ovenproof dish until golden brown. Start checking after 45 minutes, can bake up to 60 minutes.
