Bacon-and-cheese turnovers

These make-ahead turnovers are a cheesy delight that will brighten up your day. Pile in the goodness – two cheeses, crispy bacon, honey and mustard – fold over the puff pastry and bake until golden. Allow to cool and it’s the perfect to-go lunch. Add a few other snacks such as yoghurt and cucumber for a balanced lunch for you and your kids.

Ingredients

Method
  • 250 g diced bacon
  • 1 roll Woolworths frozen all-butter puff pastry, thawed
  • 2 T cream cheese
  • 1 t Dijon mustard
  • 1 t honey
  • ½ cup Gouda cheese, grated
  • 1 T chives, chopped
  • 1 free-range egg, beaten, for brushing

1. Preheat the oven to 180°C and line a baking tray with baking paper.

2. Fry the bacon until golden and crisp, drain on kitchen paper and cool.

3. Cut the pastry into 4 or 6 squares.

4. Combine the cream cheese with the mustard and honey. Brush onto the centre of the pastry squares.

5. Combine the bacon, cheese and chives and spoon on top of the cream cheese.

6. Brush the edges of the pastry with a little beaten egg, then fold two opposite corners of the pastry over the filling so they meet in the middle.
