Woolworths’ Flavourburst sweet potatoes are the sweetest spuds you’ll have this year. The best way to elevate them? A topping that’s deliciously savoury and packed with umami, of course. Here are two takes on loaded sweet potatoes that will blow your mind: four cheeses and miso butter. Go ahead – make both, we won’t judge!

Ingredients

Method
    For the four-cheese sweet potatoes: 

  • 8 Woolworths Flavourburst sweet potatoes
  • 200 g mozzarella, grated  
  • 150 g Gorgonzola
  • 180 g Woolworths sheep-and-goat’s milk feta
  • 50 g Parmesan, finely grated  
  • For the miso butter sweet potatoes: 

  • 4 T Woolworths Hikari Karu-Mu Koji miso paste
  • 4 T butter, softened  
  • 20 g Parmesan, finely grated  

Method

Ingredients

1. Preheat the oven to 180°C. Place the sweet potatoes on a baking tray and bake for 25–30 minutes, or until soft.
2. Remove from the oven and slice through the top lengthways, as if cutting a hot dog roll.
3. Top 4 sweet potatoes with mozzarella, a dollop of Gorgonzola, a generous crumble of feta and grated Parmesan.
4. Stir the miso paste through the butter and divide between the remaining sweet potatoes. Sprinkle with Parmesan.
5. Return to the oven for 5–7 minutes, or until the cheese and butter have melted.
6. Serve immediately.
