Chocolate chip and pecan nut cookies

  • 180 g butter
  • 120 g brown sugar
  • 2 free-range eggs
  • 280 g cake flour, sifted
  • 1 t baking powder
  • 120 g chocolate chips
  • 50 g roasted pecan nuts, chopped

Method

Ingredients

Preheat oven to 180C°.

To make your cookie dough cream together the butter and brown sugar in an electric mixer until pale and creamy, then beat in the eggs, adding one at a time.

Now add the sifted flour and baking powder to form a smooth dough.

Fold through the chocolate chips and chopped toasted pecan nuts.

Roll the mixture into even bite sized balls and press to flatten on a baking tray lined with greaseproof paper.

Bake for 12–15 minutes or until golden.
