Chocolate cookies with braaied marshmallow centres
Ingredients
Method- 500 g cake flour
- 50 g cocoa powder
- Salt, a pinch
- 350 g unsalted butter, cut into pieces
- 250 g caster sugar
- 50 g chocolate chips, roughly chopped
- 50 g dried cranberries, roughly chopped
- 25 white and pink marshmallows, braaied
- 2 T cocoa powder, for dusting
- Coffee or vanilla ice cream, for serving
Method
IngredientsPreheat the oven to 180°C and lightly grease a baking tray with cooking spray.
Place the flour, cocoa powder and salt in a mixing bowl. Add the butter and rub with your fingers until the mixture resembles breadcrumbs. Add the sugar and knead until a dough forms.
Add the chocolate chips and cranberries. Lightly knead until well mixed.
Chill for 15 minutes, then roll out the dough to a thickness of 1 cm. Cut into desired shapes.
Place on the tray and bake for about 8 to 12 minutes, or until cooked through.
Remove from the oven and cool slightly before transferring to a wire rack.
Grill the marshmallows over medium coals until soft and sandwich each one between 2 cookies. Dust with cocoa powder and serve with coffee or vanilla ice cream.
