Mafaldine
Mafaldine is pasta. Similar to the waves of lace that give the finishing touch to a queen’s precious gown, Mafaldine belongs to a veritably "regal" shape of pasta, since the Mafaldine were dedicated by Neapolitan people to Princess Mafalda di Savoia.
Mafaldine are long in form, like a curly ribbon, and retain the shape after cooking which allows it to blend with sauces while maintaining the pasta’s flavour. Mafaldine love rich and sumptuous recipes that evoke erstwhile banquets of Italian noble families.
