Spring onion pancakes

1. Soften 1 chopped red onion, 5 chopped garlic cloves and 5 g fresh thyme in 2 T olive oil.
2. Add 800 g chopped mushrooms and cook for 5 minutes. Stir in 2 cups good-quality chicken stock and season.
3. Simmer for 5 minutes, then blend.
4. Serve with dollops of mascarpone, Woolworths' coriander-and-lime pesto and grated radish.
