- 1 red onion
- 5 garlic cloves, chopped
- 5 g fresh thyme
- 2 T olive oil
- 800 g mushrooms
- Mascarpone, for serving
- Woolworths coriander-and-lime pesto, for serving
- radish, grated, for serving
Soften 1 chopped red onion, 5 chopped garlic cloves and 5 g fresh thyme in 2 T olive oil.
Add 800 g chopped mushrooms and cook for 5 minutes. Stir in 2 cups good-quality chicken stock and season.
Simmer for 5 minutes, then blend.
Serve with dollops of mascarpone, Woolworths' coriander-and-lime pesto and grated radish.
