Berry popsicle surprise cocktail

Prep Time 15 minutes, plus overnight freezing time

Ingredients

For the popsicles:

400 g frozen mixed berries
1 cup orange juice
1 t fresh ginger, grated
4 T caster sugar

For the cocktail:

4 oranges, rinsed and sliced
1 cucumber, cut into ribbons
125 g strawberries, halved
3 cups lemonade
1 cup ginger ale
1 1⁄4 cups Pimms No. 1
8 sprigs mint

Method

1. To make the popsicles, blend the berries, juice, ginger and sugar until smooth. Pour into popsicle moulds, insert popsicle sticks and freeze for 4 hours or overnight until solid.

2. Place the oranges, cucumber and strawberries into a jug, then pour over the lemonade, ginger ale and Pimms.

3. Pour the cocktail into glasses filled with ice, then place a popsicle into each glass, add a sprig of mint and serve immediately.
