How to make the perfect custard, every time
Making your own custard from scratch is easier than you think. Here’s how to end up with sweet, silky heaven and not scrambled eggs.
Follow the steps below to make homemade custard.
1. Scald ¾ cup milk in a small saucepan over a high heat. Remove from the heat.
2. Cream 2 free-range egg yolks, 30 g white sugar and the seeds of 1 vanilla pod.
3. Whisk a little of the warm milk into the egg mixture. Add the remaining milk to the eggs and whisk.
4. Transfer to a clean saucepan, return to the heat and cook, stirring continually, until the custard thickens and coats the back of a spoon.
Serve your homemade custard with baked caramelised apples, poached guavas, or sticky toffee pudding.
