We could all do with adding more veggies to our plates, and they don’t have to be boiled or steamed. Woolworths’ plant-based range includes exciting vegetarian and vegan options that are quick and easy to prepare. The whole family will love new quinoa-and-kale burgers, marrow-and-potato fish cakes and the vegan loaf, made using brinjals, mushrooms and brown rice. You’ll still find old favourites such as butternut-paprika and sweet potato sausages, mushroom and veg risotto Kiev and veggie burgers on the shelves. There’s really no excuse not to eat more greens.
SERVING SUGGESTIONS: Use the fish cakes to make tacos with sriracha mayo, pink pickled onions and red slaw. Make burgers using the quinoa-and-kale burgers and stack with carrot ribbons and garlic veganaise. Make a nacho bowl using the butternut sausages, avocado, pink pickled onions, red slaw and chargrilled corn with coriander. Make a Thai green coconut curry using the chickpea bites and grilled cauliflower. Serve with pomegranate rubies or crisp chickpeas.
