Ingredients
Method- 210 g cake flour
- 200 g brown sugar
- 1 t bicarbonate of soda
- ½ t salt
- 2 free-range eggs
- 1 cup mashed avocado (approximately 2 medium-sized avocados)
- 2 limes, zested
- ½ cup avocado oil
- ¼ cup buttermilk
- 1 t vanilla extract For the lime drizzle:
- 130 g icing sugar
- 2 limes, juiced and zested
Method
IngredientsPreheat the oven to 180°C.
Combine the flour, sugar, bicarbonate of soda and salt. Place the eggs, avocado, lime zest, avocado oil, buttermilk and vanilla in a separate bowl.
Whisk the wet ingredients, then stir into the dry ingredients. Do not overmix the mixture; stop mixing as soon as the two are combined.
Pour the batter into a greased 20 x 11 cm loaf tin and bake for 1½ hours, or until a skewer inserted comes out clean. Allow to cool, then pour over the lime drizzle.
To make the lime drizzle, mix the icing sugar and lime juice until smooth and thick.

There is a problem with the recipe for ‘Avocado-and-lime loaf bread’. I baked it and it tasted so bad that even my dogs wouldn’t eat it. The recipe calls for 100g Bicarbonate of Soda. I realised that it is way too much (a whole container of bicarb?!) I only used 10g of bicarb but still the end result was totally too much bicarbonate of soda – nauseating taste. I had to throw it in the dustbin – a lot of money and energy absolutely wasted.
Please come back to me and tell me what is wrong with the recipe and how much bicarb I actually should have used.
