Bacon-crusted salmon with minty peas

  • 1 x 200 g packet Woolworths streaky bacon
  • 4 x 120 g Norwegian salmon portions
  • 1 free-range egg, beaten
  • 1 T olive oil, for frying plus, extra for drizzling
  • 2 cups frozen peas
  • 1 t fresh mint, chopped
  1. Preheat the oven to 200°C. Pan-fry Woolworths streaky bacon in olive oil until very crispy. Blend or finely chop the bacon until its texture resembles breadcrumbs.
  2. Dip the portions Norwegian salmon into the beaten free-range egg.
  3. Generously pat the bacon onto the top of each portion. Heat the olive oil in a nonstick pan until very hot. Fry the fish skin-side down for 3–5 minutes, or until crispy. Finish in the oven for a further 2–4 minutes. Do not turn the fish.
  4. Cook the frozen peas in salted boiling water for 3 minutes. Drain and coarsely mash using a fork, adding a drizzle of olive oil and chopped fresh mint. Season to taste and serve with the salmon.
