Beef burgers with shallots

This gourmet-style burger is easy enough for a weeknight dinner but impressive enough to serve at your next dinner party.

- 1 T olive oil
- 4 Woolworths free-range beef burgers
- sea salt and freshly ground black pepper, to taste
- 4 T Woolworths original BBQ braai marinade
- 4 Woolworths potato rolls
- 100 g Woolworths Crunchita lettuce For the caramelised shallot cream cheese sauce:
- 2 T olive oil
- 8 Woolworths French shallots, sliced
- 4 sprigs fresh thyme
- 1 T balsamic vinegar
- 1 T brown sugar
- sea salt, to taste
- 250 g cream cheese For the fried shallots:
- 8 Woolworths French shallots, finely sliced
- 3 T cornflour
- vegetable oil, for deep-frying
- sea salt, to taste
Method
Ingredients
1. Heat the olive oil in a pan. Season the burger patties, then sear for 3–4 minutes on each side or until cooked to your preference. Brush with the BBQ marinade during the last minute of cooking time to glaze.
2. To make the caramelised shallot cream cheese, heat the olive oil in a pan over medium heat. Add the sliced shallots and thyme, and cook gently until golden and soft. Stir in the balsamic vinegar, brown sugar and a pinch of salt, and cook until jammy.
3. Remove the thyme sprigs, cool slightly, then mix into the cream cheese until smooth and well combined.
To make the fried shallots, toss the shallots in the cornflour to coat evenly. Fry the shallots in batches in the hot vegetable oil until golden and crisp.
4. Remove using a slotted spoon, drain on kitchen paper, and season with sea salt.
5. Layer each toasted bun with lettuce, a burger patty, a generous spoonful of caramelised shallot cream cheese and a sprinkle of crispy shallots, then top with the top half of the bun.
Cook’s note: For extra indulgence, add a slice of melted Cheddar or smoked Gouda to the burger after glazing.
