Siba’s spiced Christmas cookies

Make a big bowl of this beef tartare with spicy tomato vinaigrette and let guests help themselves. If you prefer, serve with rösti or salt-and-vinegar chips. As an alternative use salmon or trout instead of beef.
1. To make the vinaigrette, whisk together the ingredients, check the seasoning and chill while you make the tartare.
2. Top the toasted ciabatta with the tartare and season with the vinaigrette. Garnish with the crispy capers and chives.
