Brown onion soup with cheesy toasties
All of the flavour of French onion soup, in half the time. With the addition of a few clever ingredients, Abi's onion soup is a surefire winter winner.

Ingredients
Method- 3 T butter
- 6 onions, finely sliced
- 3 thyme sprigs
- 1 bay leaf
- 2 garlic cloves, finely chopped
- 4 cups beef stock
- 2 T Woolworths onion marmalade (optional)
- 1 x 40 g packet Woolworths beef-flavoured thickener
- For the toasties:
- 1 T butter, softened
- 8 slices Woolworths thick-sliced white bread
- 1 ½ cups Cheddar cheese, grated
Method
Ingredients1. Heat a large ovenproof pan and add the butter. When the butter has melted, add the onions, thyme and bay leaf and cook over a low heat until soft and golden brown. Add the garlic and cook for another 2 minutes.
2. Add the stock and onion marmalade if using and bring to the boil. Sprinkle in the beef thickener and stir to combine. Reduce the heat to a simmer and cook for 20 minutes, or until the onions are soft.
3. While the soup is cooking, make the cheese toasties. Spread 4 slices bread with butter. Divide 1 cup Cheddar between the remaining unbuttered bread. Place the other slices of bread on top, buttered side up.
4. Heat a non-stick pan and sprinkle in some of the leftover cheese. Place one of the sandwiches into the pan on top of the cheese and cook until the bread is golden brown and the cheese is melted. Turn over and caramelise the other side. Repeat until all the toasties are made. Place in a low oven to keep warm. Serve the soup in bowls with the toasties laid over the top.
