  • 200 g brown sugar
  • 160 g butter
  • 2 t vanilla paste
  • 2 pineapples, peeled and cut into wedges
  • 12 Woolworths frozen pancakes, thawed
  • 1 cup coconut cream
  • 50 g pistachios, crushed

Method

Ingredients
  1. Place the brown sugar, butter and vanilla paste in a pan and melt. Add the pineapple wedges and caramelise on all sides over a medium heat. Reduce the heat if necessary and add more butter if the sugar becomes too thick.
  2. Prepare the pancakes according to package instructions (or make your own using this pancake recipe). Serve with the warm pineapple, burnt brown sugar syrup, coconut cream and crushed pistachios.

Cook's note: Woolies' frozen pancakes are a fantastic alternative to making your own from scratch. No-one will know the difference.
