Caprese tray bake

This ultra-simple caprese tray bake is so easy to bash together and is a terrific crowd-pleaser. Enjoy hot, and make sure there’s lots of crusty bread to tear and dip into this tray of cheesy, gooey goodness!

Ingredients

Method
  • 800  g mozzarella, sliced into rounds 
  • 6 Roma tomatoes, washed and thickly sliced 
  • ½ cup extra virgin olive oil 
  • ½ cup balsamic vinegar 
  • sea salt and freshly ground black pepper, to taste 
  • crusty bread, grilled, for serving 
  • fresh basil, to garnish 

1. Preheat the oven to 180°C. Lightly grease a 20 cm baking tray and arrange the cheese and tomato slices in the tray in a fan-like fashion, until the tray is covered.

2. Drizzle with half the olive oil and a bit of balsamic vinegar and season well. Bake for 15–20 minutes, or until golden brown and bubbling. Garnish with the basil and serve immediately with the bread and extra balsamic and olive oil.
