- 800 g packet Woolworths Easy to Cook ready-cut sweet potato chips
- 1 - 2 T olive oil
- 2 x 500 g punnets Woolworths Easy to Cook lightly smoked Norwegian salmon
- 2 T olive oil
- pea shoots to garnish

- Preheat the oven to 180°C.
- Toss the ready-cut sweet potato chips in olive oil and roast for 25–30 minutes, or until golden brown.
- Meanwhile, roast lightly smoked Norwegian salmon for 15 minutes, or until the coating is starting to brown. Transfer to a pan and brown in 2 T olive oil until golden.
- Serve hot with the sweet potato chips and garnish with pea shoots.
Cook's note: Hands down, this is the best roast you can whip up fast. Great for last-minute guests or a Friday-night treat after a long week.
