- 800 g packet Woolworths Easy to Cook ready-cut sweet potato chips
- 1 - 2 T olive oil
- 2 x 500 g punnets Woolworths Easy to Cook lightly smoked Norwegian salmon
- 2 T olive oil
Preheat the oven to 180°C.
Toss the ready-cut sweet potato chips in olive oil and roast for 25–30 minutes, or until golden brown.
Meanwhile, roast lightly smoked Norwegian salmon for 15 minutes, or until the coating is starting to brown. Transfer to a pan and brown in 2 T olive oil until golden.
Serve hot with the sweet potato chips and garnish with pea shoots.
Cook's note: Hands down, this is the best roast you can whip up fast. Great for last-minute guests or a Friday-night treat after a long week.
