Method- 2 x 170 g punnets asparagus, blanched For the cheat\'s healthy mayonnaise:
- juice of 1 lemon
- 1/2 cup creme fraiche
- 2 T chopped chives
- 2 T chopped parsley
- 1/2 red onion, grated
- 12 green olives, smashed
- Sea salt and freshly ground black pepper
Method
IngredientsIn a saucepan over a medium to high heat, blanch the asparagus briefly so that they retain their crisp texture. Drain, then serve with a dollop of the cheat’s healthy mayonnaise.
To make the cheat’s healthy mayonnaise:
Whisk the lemon juice into the crème fraîche. Mix through the herbs, grated red onion and smashed olives, and season to taste.
