  • 2 x 170 g punnets asparagus, blanched
  • For the cheat\'s healthy mayonnaise:
  • juice of 1 lemon
  • 1/2 cup creme fraiche
  • 2 T chopped chives
  • 2 T chopped parsley
  • 1/2 red onion, grated
  • 12 green olives, smashed
  • Sea salt and freshly ground black pepper

In a saucepan over a medium to high heat, blanch the asparagus briefly so that they retain their crisp texture. Drain, then serve with a dollop of the cheat’s healthy mayonnaise.

To make the cheat’s healthy mayonnaise:
Whisk the lemon juice into the crème fraîche. Mix through the herbs, grated red onion and smashed olives, and season to taste.
