“Egusi are the seeds of a bitter melon grown and eaten predominantly in West Africa. After watching Tapiwa Guzha bake a magnificent egusi cake on Instagram, I was inspired to make this butter. It’s delicious smeared on bagels with honey.”- Khanya Mzongwana

Ingredients

Method
  • 140 g egusi seeds, plus extra for sprinkling
  • 4 T canola oil
  • 1 T brown vinegar
  • 1 T brown sugar
  • ¼ cup water (add as required)
  • ½ t salt
  • bagels, toasted, for serving
  • honey, for drizzling

1. Preheat the oven to 180°C. Place the egusi seeds on a baking tray and roast for 10 minutes, or until lightly browned.

2. Place all the ingredients including the seeds (set aside a few for sprinkling) into a blender and blend at full power until very smooth.

3. Spread on toasted bagels, drizzle with honey and sprinkle over the remaining egusi seeds.
