Don’t let working on a Saturday rid you of your weekend spirit. Make up a mini picnic with these waffle-pressed sweetcorn falafels.

Ingredients
Method- 200 g chickpeas, soaked overnight
- 3 cloves garlic
- 1 T ground coriander
- 1 T ground cumin
- 1 T smoked paprika
- 1 T smoked chilli flakes
- 10 g fresh coriander
- 2 T Woolworths tahini
- 1 cob sweetcorn, grilled and kernels removed from the cob
- 1 lemon
- hummus, for serving
- tzatziki, for serving
- fresh vegetables, for serving
Method
Ingredients1. Blend all the ingredients until crumbly in texture. Shape into small patties.
2. Heat a waffle iron and grease lightly. Place 2 T mixture in the centre of the waffle iron and grill for 5 minutes or until light golden brown and crispy.
3. Serve with hummus, tzatziki and fresh veggies.
