  • 1 T caster sugar
  • 2 grapefruit, peeled and sliced
  • 1 x 620 g box Woolworths vanilla cake mix
  • 3 free-range eggs
  • 1 cup milk
  • 1 cup sunflower oil
  • Vanilla ice cream, for serving

Method

Ingredients
  1. Preheat the oven to 200°C and grease 1 x 23 cm cake tin. Dust a thin layer of caster sugar into the bottom of the cake tin and layer in the fruit.
  2. Prepare the cake mix according to package instructions. Pour the mixture into the tin and bake for 50 minutes, or until golden and cooked through.
  3. Allow the cake to cool slightly, then turn out onto a plate. Serve with vanilla ice cream.

Cook's note: Use oranges, clementines or ClemenGolds instead of grapefruit.
