  • 150 g Bocconcini cheese
  • Fennel bulb, thinly sliced
  • Mint, chopped
  • Baguette, sliced
  • Olive oil
  • Garlic, crushed
  • Lime
  • Green tomatoes, sliced
  • Tigarella tomatoes, sliced

Heat olive oil in a pan, add the baguettes and garlic. Toast until golden brown.

Mix equal amounts of tomatoes in a bowl. Add the fennel and the bocconcini. Sprinkle with chopped mint, olive oil and lime juice. Season.

Cook's note: Tigarella tomatoes is a plum shaped tomato with a fruity flavour and a good acid balance. It has a firm red skin and a characteristically green stripe. This crunchy tomato is an ideal snacking tomato and adds beautiful interest to a dish.
