Ingredients
Method- Large brinjal
- 2 T olive oil
- Fresh lemon juice
- ½ cup plain yoghurt
- ½ cup chopped coriander
- 2 crushed cloves garlic
- 2 fillets of salmon
- 1 T olive oil
- Sea salt
Method
IngredientsSlice a large brinjal into small chunks and toss with olive oil to coat. Pan-fry in a hot pan until charred on all sides (about 10 minutes), remove from the heat and squeeze over fresh lemon juice.
Fold together with thick plain yoghurt, chopped coriander, crushed cloves garlic and seasoning, to taste. Rub fillets of salmon with olive oil and sprinkle with a little sea salt. Grill for 5 to 10 minutes and serve warm with the brinjal salsa.
