Ingredients
Method- 1 x 700g pack Woolworths crumbed free-range chicken schnitzels
- 125g sour cream
- 1 red onion, finely diced
- 200 g cocktail tomatoes, sliced
- 10 g fresh coriander, chopped
- 1 lime or lemon, juiced
- sea salt and freshly ground black pepper
Method
Ingredients1. Preheat the oven to 180°C. Bake the schnitzels on a tray for 20 – 25 minutes, until golden and crunchy. Top with 1 -2 T sour cream (you can also use crème fraîche or guacamole).
2. Sprinkle over the red onion and tomatoes. Garnish with coriander and squeeze over the lime or lemon.
Cook's note: Use a spoonful of Woolworths tomato salsa instead of fresh tomato.
Nice refreshing quick & easy supper – would have this again but summer time
