Ingredients

Method
  • 200 g pork rashers, diced
  • 100 g baby spinach
  • 50 g cooked green beans
  • 200 g cooked baby potatoes
  • 1 x 170 g drained tuna
  • Olive oil, for dressing
  • Lemon juice, for dressing
  • 4 soft-boiled eggs

Fry 200 g diced pork rashers until crisp. Toss with 100 g baby spinach, 50 g cooked green beans, 200 g cooked baby potatoes and 1 x 170 g can drained tuna.

Dress with olive oil and lemon juice, season and top with 4 soft-boiled eggs.
