Opal® apple-coconut curry sauce

Ingredients

Method
  • 1 T oil
  • 150 g tub Woolworths laksa fresh paste
  • 1 T crushed turmeric
  • 1 T crushed ginger
  • 1 T crushed garlic
  • 400 ml coconut milk
  • 2 Flavourburst™ Opal® apples, grated
  • pinch of salt
  • 1 lime, juiced
  • 200 g baby pak choi, blanched, for serving
  • 4 crumbed chicken breast fillets, baked, for serving
  • fresh coriander, chopped, for serving
  • 1 lime, zested, for serving
  • red chilli, chopped, for serving


1. Heat the oil in a frying pan. Stir in the laksa paste and cook for 1 minute. Once fragrant, add in turmeric, ginger, and garlic and cook for 1 minute.

2. Add in the coconut milk, apples, and lime juice and cook for 5 minutes. Taste and season to your preference

3. Serve with blanched pak choi, crumbed chicken, coriander, lime zest, and chopped red chilli.
