- 150 g mild Gouda
- 1-2 baby cabbages
- 6–8 salad onions, thinly shredded For the dressing, mix:
- 2 T white wine vinegar
- 1 t Dijon mustard
- 6 T olive oil
- 1 T cumin seeds, lightly toasted
- Sea salt and freshly ground pepper to taste

Cumin and Gouda are a classic combo. Here, lightly toasted cumin seeds are added to the dressing to spike a cheesy coleslaw.
Thinly slice the cheese using a cheese slicer and the cabbage using a mandolin.
Toss the cabbage, onions and cheese with the dressing and serve immediately.
