Spicy meatloaf
I’ve always wanted to find out the truth about meatloaf. I used to think of it as the worst thing to be served in a school cafeteria, or the dreary retro dinner served by a tired TV housewife. This recipe for spicy meatloaf ends all those misconceptions and the plum basting sauce gives it a sweet-and-sour kick into the present.
Ingredients
Method- 500 g lean beef mince
- 400 g pork mince
- 1 medium onion, finely chopped
- 2 large free-range eggs
- 3 cloves garlic
- 10 g Italian parsley, roughly chopped
- 4 slices wholewheat bread
- 5 T milk
- 1 T Woolworths steak rub
- 1 T ground paprika
- 1 T dried thyme
- 4 T Worcestershire sauce
- ½ cup Woolworths sticky plum baste and dip
Method
Ingredients1. Preheat the oven to 200°C. Line a 25 cm loaf tin with greaseproof paper. In a bowl, combine all the ingredients except the basting sauce and press into the lined loaf tin. Bake uncovered for 30 minutes, or until
firm.
2. Carefully remove the meatloaf from the tin, pouring over the cooking liquid. Using a basting brush, baste the meatloaf on all sides with a generous layer of the basting sauce and return to the oven for 10 minutes. Grill until slightly caramelised. Serve hot with vegetables and mashed potatoes.
