Spicy prawn and mussel stew with butter-toasted ciabatta

25 minutesPacked with tender seafood, a rich tomato base and the signature heat of ’nduja paste, this rustic stew is the perfect mix of hearty and elegant. The addition of Woolworths’ frozen cooked shell-on prawns and mussels makes this an easy win on a weeknight. Serve with butter-toasted ciabatta and Parmesan shavings.

- 2 T olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 T Woolworths ’nduja paste
- 1 x 400 g can chopped tomatoes
- ½ cup vegetable stock
- 300 g Woolworths frozen cooked shell-on large prawns, thawed
- 300 g Woolworths frozen mussels, thawed
- sea salt and freshly ground black pepper, to taste
- 1 loaf ciabatta, sliced
- 2 T butter
- 40 g Parmesan, shaved
- celery leaves, dressed with lemon juice and olive oil
Method
Ingredients
1. Heat the olive oil in a saucepan and sauté the onion and garlic until soft. Stir in the ’nduja paste and cook until fragrant.
2. Add the tomatoes and stock. Simmer for 10–15 minutes until slightly reduced. Add the prawns and mussels, cover and simmer gently until heated through, about 5–7 minutes. Season to taste.
3. Toast the ciabatta in the butter until golden. Serve the stew with the toasted ciabatta, Parmesan and celery leaves.
Cook’s note: You can use sourdough or baguette if ciabatta isn’t available – just don’t skip the toasting step!
