Ingredients
Method- 500 g queen-size prawns, shelled and de-veined
- 1 red onion, peeled and sliced
- 1/2 cucumber, seeded and roughly chopped
- 1 red chili, seeded and finely chopped
- 1 bunch frisee lettuce
- 1/2 bunch radicchio leaves, roughly torn
- Coarse sea salt and freshly ground black pepper, to taste For the dressing:
- 2 T honey
- 1 t Djion mustard
- 1 T lemon juice
- 1 T lemon juice
- 3 T canola oil
- 2 T pouring cream
Method
IngredientsSteam the prawns for 5 minutes until they are bright pink and opaque. Assemble the rest of the salad ingredients on a serving platter and top with the prawns. Pour over the dressing and serve immediately.
To make the dressing:
Stir the honey, mustard and lemon juice together in a pouring jug. Slowly add the oil, whisking all the while, to form an emulsion. Add the cream and combine.
