Method
  • 240 g flour
  • 2 free-range eggs
  • a pinch of salt
  • 4 t water approx.
  • cornflour, for dusting

Method

Ingredients

1. Place all the ingredients except the cornflour into the bowl of a stand mixer and knead for 5 minutes using the dough hook attachment, or until the dough is combined and elastic. Add more water if necessary. Rest the dough for 10 minutes.

2. Roll out the dough thinly using a pasta maker or by hand on a surface dusted with cornflour. Cut into squares of approximately 15 cm.

3. Pile up the wrappers, sprinkling cornflour between each one so they don't stick together. Wrap in cling wrap and freeze until ready to use. Thaw in the fridge before using.
