5 Easter brunch recipes to impress your guests

My grandmother taught us about brunch before we even knew what it was called. Over Easter, the eating began early. We started and ended with hot cross buns, and there was always fish (pickled, smoked or fried), freshly baked bread, cheese and farm-fresh eggs. This meal is that sweet spot where anything goes. You can justify eating whatever you like – as long as you crack an egg over it!
1. Polenta pancakes with trout pâté
These pancakes are some of the fluffiest you’ll ever make, and a great way to use up that last bit of polenta. The trout pâté is a classic brunch favourite and caviar is always optional.
