5 of our favourite school bakes

By Jeanne Calitz, 5 February 2025

The school year is in full swing, and chances are there will be a bake sale or “treat Friday” in your future soon. Stumped at what to make? We’ve rounded up five of our favourite baked treats that can be whipped up quickly.

1. 5-ingredient microwave fudge

The good words are all here, right? Just five ingredients, and something that can be made in the microwave (in 15 minutes!)? We’ll throw in another good word: Chuckles. Yes, this fudge recipe boasts a generous scattering of Chuckles. Who could resist? Granted, the fudge needs a couple of hours’ chilling time, but that leaves you to get on with all the other things on your to-do list.

2. Sam Woulidge’s jam doughnut cupcakes

Another quick win: these babies can be ready in 30 minutes! A lovely cross between a doughnut and a cupcake, you could replace the apricot jam with any other jam (we’re thinking strawberry and plum). And the best part is, you don’t have to mess about with any sticky icing.

3. Easy lemon blondies

Zesty lemon meets creamy white chocolate in these delicious blondies. This recipe, adapted from TikTok by our very own digital editor Katharine Pope, has a pleasing dense texture, which makes them the perfect non-messy snack to hold in little hands.

4. Simple chocolate sheet cake

No list of handy school bakes is complete without a sheet cake, and this recipe is a doozy. Easy to slice and super chocolatey, it’s the perfect choice for the next school event. One recommendation: the icing is slightly on the runny side, so to prevent any mess on the day, you might want to use your usual firm icing or try something simple like a layer of Caramel Treat on top.

5. Abigail’s fun fairy cookies

Not all cookies are created equal, and Abi’s fairy cookies will delight young and old. Her secret? Using vanilla paste for that ultimate vanilla flavour, a generous hand with the hundreds-and-thousands for rolling, and melted white chocolate to sandwich them together. We’re sold, how about you?
