Flapjacks with braaied Melba fruit

Ingredients

Method
  • 240 g cake flour
  • 2 t baking powder
  • 2 free-range eggs
  • 1½ cups milk
  • 3 T butter
  • cream, for serving
  • For the braaied fruit:

  • 3 T butter
  • 1 cup maple syrup
  • 4 T lemon juice
  • 8 ripe nectarines, halved and stoned
  • 800 g raspberrie

1. Place the flour, baking powder, eggs and milk in a blender. Blend until smooth, then rest for 30 minutes.

2. Brush a heated flat-top grill with butter and spoon on large spoonfuls of batter. Cook for 2 minutes on each side.

3. To make the fruit, heat the butter and syrup in a cast-iron pan on the heated cooking racks.

4. Add the lemon juice, then add fruit flesh side down. Cook for 8 minutes or until soft. Add the berries and cook for 3 minutes.

5. To serve, spoon the fruit over the flapjacks and pour over the cream.
