Kara sweet potatoes
Kara sweet potatoes include both orange-fleshed and white-fleshed purple-skinned varieties. The orange-fleshed Kara sweet potatoes bake to a velvety softness, while the denser, white-fleshed purple Kara sweet potatoes caramelise beautifully when roasted. We used them in a rustic galette sprinkled with thyme, brushed with honey, and dolloped with creamy goat's cheese. It’s golden, flaky, and incredibly satisfying, making it ideal for a weekend lunch or as a hearty side.
Nicola potatoes
Nicola potatoes are a waxy variety with a rich, nutty flavour and smooth texture. They shine in salads, hold up beautifully on the braai, and soak up flavour without falling apart. We charred them over the coals, then tossed them with crispy fried onions and creamy creme fraiche for a warm salad that’s equal parts fancy and familiar.
