Bombay rice with tikka-smoked chicken

This dish is all about maximum flavour with minimum effort. Woolworths’ curry pastes bring instant depth, while smoked chicken adds a savoury, ready-to-eat shortcut that still tastes homemade. The Bombay-spiced rice is richly fragrant and pairs perfectly with the creamy coriander chutney on top. You can easily customise this dish with leftover roast chicken, roasted vegetables or a dollop of yoghurt if you want to mellow the heat. It’s a fast pantry-friendly recipe that’s ideal for busy evenings.

Ingredients

Method
  • 180 g basmati rice, cooked according to package instructions 
  • 200 g Woolworths Bombay potato paste  
  • sea salt and freshly ground black pepper, to taste
  • 1 T canola oil
  • 200 g jar Woolworths tikka chicken paste 
  • 140 g Woolworths smoked chicken breast, chopped  
  • Woolworths coriander, green chilli and mint chutney, for serving
  • fresh coriander, chopped, for serving

1. Cook the basmati rice according to package instructions. While hot, stir through the potato paste and season.

2. Heat the canola oil in a pan over a medium heat. Add the tikka chicken paste and cook for 1–2 minutes until fragrant.

3. Add the chicken and toss to coat. Cook for 2–3 minutes until heated through.

4. Spoon the Bombay rice into bowls and top with the chicken. Finish with Woolworths coriander chutney and fresh coriander.

Cook’s note: Swap the smoked chicken for leftover roast chicken — simply shred and warm it through in the tikka paste.
