Ingredients

For the pickle:

¼ cup rice vinegar
¼ cup water
2 t sesame oil
1 T Woolworths Asian Everything Soya Sauce
2 g fresh ginger, sliced
1 clove garlic, peeled
sea salt
100 g pack Woolworths asparagus tips

To serve:

6 baby carrots, peeled and halved
110 g Woolworths shelled edamame legumes
1 avocado, peeled
3 spring onions
microherbs, to garnish

Method

1. Place all the pickle ingredients into a small saucepan. Bring to a simmer, then remove from the heat. Add the asparagus tips and carrots to the pickling liquid. Set aside for at least 20 minutes.

2. To serve, arrange the edamame, pickled vegetables and avocado on a platter. Garnish with spring onion and microherbs.
