Asian-inspired pickled asparagus tips

For a fresh summery salad, you can’t get better than this quick pickled asparagus salad. Asparagus tips and baby carrots are pickled in light Asian-inspired flavours and served with fresh avocado, edamame beans and spring onions.

Ingredients

Method
    For the pickle: 

  • ¼ cup rice vinegar 
  • ¼ cup water 
  • 2 t sesame oil 
  • 1 T Woolworths Asian Everything Soya Sauce
  • 2 g fresh ginger, sliced 
  • 1 clove garlic, peeled 
  • sea salt
  • 100 g pack Woolworths asparagus tips 
  • To serve:

  • 6 baby carrots, peeled and halved 
  • 110 g Woolworths shelled edamame legumes 
  • 1 avocado, peeled 
  • 3 spring onions  
  • microherbs, to garnish 

Method

Ingredients

1. Place all the pickle ingredients into a small saucepan. Bring to a simmer, then remove from the heat. Add the asparagus tips and carrots to the pickling liquid. Set aside for at least 20 minutes.

2. To serve, arrange the edamame, pickled vegetables and avocado on a platter. Garnish with spring onion and microherbs.
