Mortadella-and-soft goat’s cheese dip

1. Heat the olive oil in a small pan and add the mortadella. Fry until crispy, stirring occasionally, about 5–7 minutes. Drain on a kitchen paper, then add the capers to the hot pan.
2. Flash-fry the capers for 1–2 minutes, then drain on kitchen paper.
3. Spread goat’s cheese onto a dinner plate and top with the crispy mortadella, capers and diced gherkins.
4. Drizzle with olive oil, season with black pepper and serve with the warm, crusty bread.
