Ingredients

Method
    Egg base:

  • 6 x-large free-range eggs
  • ¼ cup milk 
  • ¼ cup cream 
  • sea salt and freshly ground black pepper, to taste
  • Smoked biltong, peppadews, feta and baby spinach: 

  • 30 g free-range smoked sliced beef biltong, roughly chopped 
  • 35 g peppadews, roughly chopped 
  • 1 round feta, cubed 
  • 20 g baby spinach, shredded
  • Biltong, cheese, tomato and baby spinach: 

  • 30 g free-range original biltong, roughly chopped 
  • 60 g cheddar, grated 
  • 70 g Rosa tomatoes, quartered 
  • 10 g baby spinach, shredded 

1. Preheat oven to 180C.
2. Grease a 12 hole muffin pan generously and set aside.
3. Whisk together egg base ingredients.
4. Pour egg mixture into prepared muffin tin until ¾ full.
5. Fill the one half of the pan with the one set of ingredients and the other half with the other ingredients.
6. Bake for 15 mins or until set.
7. Allow to cool in pan before removing.
